The Holiday Drink – How to Make It

WHere is an easy interpretation of a cocktail featured on a new menu. It's a party-sized prepared mix that is loaded with flavours associated with holiday season, making it ideal for your celebration. Reserve the remaining cordial to use in brunch beverages, puddings, or to mix more rounds of the drink.

Bikini Recipe

Makes enough for 10 servings

For the Clementine Cordial (yields 750ml)

300ml fresh clementine juice
200ml fresh lemon juice
500g caster sugar

For the Cocktail (makes 850ml, serving 10)

400ml premium vodka
100ml dry gin
150ml peach schnapps
200ml clementine syrup (from the recipe above)
Fresh cranberries, for garnish
Mandarin essential oil, for finishing

Method

To prepare the Citrus Syrup: Place all the components in a pan, heat until it reaches a light boil, stirring so the sugar melts. Then, remove from the stove and leave to reach room temperature entirely. Decant to a sealable bottle, close it and store in the fridge, where it will keep for up to a month.

For the Premix: Combine every liquids into one sizeable container, let it rest for an hour, then filter it preferably using a fine cloth, to ensure it's fully clarified.

To serve: Pour 85ml of your batch mix into a stirring glass containing ice, and stir carefully for about 60 seconds until cold. Filter into a chilled martini glass or equivalent, garnish with some cranberries and finish with a brief mist of mandarin oil over the top.
